In order to make spinach and ricotta cannelloni really tasty you need some typical Italian products, such as cannelloni tubes,  extra virgin olive oil, ricotta and parmigiano reggiano cheese. Try to buy them in an Italian shop or buy them in an Italian food store online.
- 1 kg tomato sauce
- 2 cloves of garlic 
- 500 g ricotta
- 300 g frozen chopped spinach
- fresh basil
- 100 g parmigiano reggiano cheese
- salt and pepper to taste
- 10 dried cannelloni
- extra virgin olive oil
- a little onion
Spinach and ricotta cannelloni recipe: Procedure for sauce
Step 1: Cut the onion and put it into a pan with some extra virgin olive oil. Add tomato sauce, salt and chilli powder if you like it! Cook for 5 minutes
Spinach and ricotta cannelloni recipe: Procedure for filling
Step 2: Combine defrosted spinach, ricotta and garlic together. Add pepper and 50 g of parmigiano reggiano cheese and whisk until you get a creamy mixture.   
Pay attention: lots of foreign people cook cannelloni before filling them but this is terribly wrong: if you do it, your cannelloni will break!
Step 3: Fill cannelloni tubes with the spinach-ricotta mixture
Step 4: Spoon 500 g of tomato sauce into a big pan and arrange a row of cannelloni over it.
Step 5: Repeat the operation  with another row of cannelloni and pay attention to cover all the pasta with sauce.

Step 6: Preheat oven to 180°. Cook your cannelloni for 35 minutes. Add some extra parmigiano reggiano cheese.
